Dude, I just made Cape Cod bar style pizza using your methods and ingredients. I added pepperoni. It was better than any local pizza shop including my favorite hole-in-the-wall family joint.

550F on a steel?
Yes, exactly. I pre-heat my 1/2" steel for 1 hour on the center rack of my gas oven. I don't have one of those fancy gun thermometers but with the thermodynamics at play I'm guessing the steel plate gets in the high 500's closer to 600 than 550.

If you couldn't do it better yourself, maybe comment something encouraging. This is a good result from a home oven. To be honest, half the time Sally's and Pepe's flops. It doesn't always hold plank.

Looks tasty but too much flop for NH. I understand this may be the best you can do with a home oven but if you get a pizza oven try 700F for this style
Looks amazing, but not like the ones made by the famous New Haven pizzerias. More like a cross bw NY style pizza and New Haven. Fun fact, the pizza I grew up with in NYC is called Greek Pizza here in CT. Probably because of the Greek and Albanian operators.
Lots of Greek pizza in MA. I don't mind the extra oil on top with the Greek style

I usually like to pull the pizza out when it has about 2 or 3 minutes left and add a little hand grated pecorino Romano and pop it back in the oven. Gives it a little tangy kick. Just a little dusting.

Provolone cheese. I like to add a little picante provalone to the shredded mozzarella to give it a little more flavor. Just a little bit.

The pizza looks very good. KA Bread flour is a higher protein flour. The New Haven dough, from places like Pepe's uses a lower protein, strong flour like GM bread flour, because they want the pizza to stay thin and the higher protein flours like King arthurs bread flour gives more rise. Your pizza looks perfect to me because it resembles the New York pizza I grew up with i the 50's. Thanks for the videos! Life is good!

Hi I don't have access to these canned tomatoes and I want to know how much those tomatoes have been cooked? They don't seem to be raw
Not sure how they get the skins off the tomatoes before they get sealed in the cans. Maybe they get boiled for a few seconds to remove the skin but that's about it. Thry are basically raw and I don't cook the sauce before it goes on the pizza.
Dont get style it's not San. U can find in them in any supermarket

Sorry about that. 475 on the bottom rack the whole time except the last couple minutes switch from bake to broil and throw it on the top rack for a min. Or 2.
