The food is basically just filled into the can, sealed and heated for a certain time at a certain temperature. Both time and temp vary depending on the type of food to be conserved.
You boil it in a water bath or a pressure canner depending on what it is. Just like the glass jars, just a different container. Probably better and more even temps when you do it since metal conducts heat better than glass.
Inside the can is a vacuum and the food is boiled to over 120°c to kill all bacteria, fungi etc. Which can cause the food to go bad. AFAIK you can the food when it's raw or just partially cooked, and the heat of the boiling will cook it too, though you need to research that yourself.
@@Wildstone1-cn6hj for that you need to boil the whole can in a pressure cooker. Not in a regular boling pot as the can will explode then. The point is you cook the food AFTER it is sealed off in a can
