I’m excited to share this super refreshing strawberry shortcake recipe that’s incredibly easy to make. Perfect for hot summer days and summer parties, this delightful dessert brings together fresh strawberries, fluffy shortcake, and whipped cream for a treat everyone will love.
Cake:
2½ cups all purpose flour
3 teaspoons baking powder
½ teaspoon salt
1¾ cups granulated sugar
½ cup vegetable oil
2 large eggs, room temperature
2 large egg whites, room temperature
2½ teaspoons pure vanilla extract
½ teaspoon almond extract
⅔ cup sour cream
¾ cup milk
Filling:
3 cups sliced or diced fresh strawberries
(I did 2 cups sliced and 1 cup diced for the top)
2 tablespoons strawberry jam
Frosting:
226g cream cheese, softened to room temp
1 cup powdered sugar
¾ teaspoon vanilla extract
2¼ cups heavy whipping cream, really cold, straight from the fridge
