    Fabulous interview. I love Kenji because he's so down to earth and easy in his communication but also because he obviously wants to encourage and contribute to a better world for all of us. And he respects the concept of privacy. If you haven't yet, go explore his videos where he cooks and teaches and shows us all how we don't have to sweat about our cooking choices.

    This is genuinely so interesting to me, especially the bit at the end about learning the science behind techniques and learning different methods across various Asian cuisines, even as an Asian person who's grown up around wok cooking. For example I never really understood the logic behind washing meat, and would have always just assumed it was a "cleanliness" thing when my grandmother did it. It might've been a step I skipped myself, thinking "meat nowadays is much cleaner than it was before, so this step is likely unnecessary" and never thought twice about it. But actually delving into the science sounds so fascinating to me! There are so many little things my grandmother might have done that she replicated out of habit/learning from her own parents, that me in my perceived infinite contemporary wisdom might have either forgotten or written off in an effort to simplify! Really interested in this book now though - already love Kenji's home-style cooking UA-cam - but his cookbooks seem like perfect little kitchen companions/knowledge bases. Also let me just say that these books coupled with the 'laid back' approach to cooking that Kenji has is doing SO MUCH for food education. When people ask me for my recipes/tips I like to also direct them to Kenji's UA-cam, because it's such a perfect way to introduce people to the concept of cooking as something accessible. So many people are intimidated by "following recipes" to the T, and also panicking in the kitchen when things start (literally) getting heated. Kenji shows that real home cooking can be an easy mix of going with the flow, using what you have and casual multitasking! It doesn't need to be intimidating if you know the reason behind why you're doing something vs. doing it just cause it's 'in the recipe'.
