Quick and Easy Homemade Pecan Pie Recipe

1/4 cup olive oil
3-4 tablespoons cold water

2 1/4 cups pecan halves or coarsely chopped pecans
3 large eggs, room temperature
2/3 cup corn syrup
1/2 cup dark brown sugar, tightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon salt
1/4 cup unsalted butter, melted and cooled
