I ate at El Gaucho Bellevue tonight. It was not good nor great. Just a thoroughly average experience. My entree was dry. The bottle selection in the bar was just the typical safe selection. The bar staff was very uninformed about the selection on display. With all of the wine and whiskey bottled in the area. I'd have thought the bar staff would be more knowledgeable. One plus, they do validate parking. Need I go on? Review by a WSET.
I first had this amazing soup at El Gaucho's and later searched for a similar recipe and to my surprise, here it is! Made this on 3 occasions and used my own mushroom stock. Turned out perfectly! Thank you for sharing this delicious soup as it truly is insane!

Looks like too much lemon and not enough garlic…also, you blend the ingredients first not emulsify (1:45). The emulsification was suppose to happen by adding the olive oil slowly into the egg yolk mixture. Your emulsion never happened due to dumping it all in at once and lack of stirring. I suspect this was a runny oil like dressing with too much lemon flavour.

It is chewy, thus not in line with the texture which most people are seeking in a high-end steak. For those who don't mind it, that is up to them, of course. Thank you for your question.

I didn’t know this! Thank you! Please do a video concerning shaving Ribeye or T-Bone. I see where stores shave the brow/gray off because it was sitting in the store for days. I actually bought 7 steaks and returned them. They showed me 2 nicer red on both sides, but the 5 left over were brown on both sides! What is policy on this? What is acceptable?

That’s because she didn’t do it properly. You never dump it in like that and forget to emulsify after. This was an olive oil dressing
