Sweet Sourdough Braided Bread (aka Karavay)
Welcome to Natalia's Stories Kitchen! In this video, I am bringing a delightful twist on a classic: Sweet Sourdough Braided Bread, known as Karavay in Slavic culture. 🌾🥖
I will guide you through the step-by-step process, from mixing the tangy sourdough starter to shaping the dough into a beautiful braided loaf. With its golden crust and soft, pillowy interior, this bread will become a staple in your home kitchen.
Instructions:
The night before:
Prepare the sweet stiff starter:
60g active sourdough starter
60g bread or AP flour
26g water
12g sugar
Leave it overnight on the counter.
Baking Day:
Mix all sweet stiff starter with
120g milk
1 egg
45g sugar
4g salt
280g flour
Knead and then add 45g butter. Knead again. Transfer the dough to the clean bowl, cover and leave to rest until it doubles in size.
Divide your dough into four equal parts. Take one piece and roll it into a rope shape. Check the length with your baking pan. Mine is 8 inches. Take the second piece of the dough and roll it into an oval shape. Make sure that the length matches that of your first rope. Make several horizontal cuts, as shown in the video. Create the braid by weaving the loops together. Cover the first rope with a layer of melted butter, then place the braided dough on top of the rope. Transfer the braid to the baking pan. Pinch the joint.
Take the leftovers from these two used parts and make a ball. Place this ball in the center of your baking pan.
Cut small pieces from the third and fourth parts of the dough. You will need them later.
Roll the third portion of the dough into a long rope. Using your baking pan, measure the length of the rope. Roll out the fourth portion of the dough into an oval shape. Spread some melted butter. Place the rope in the center of the oval dough. Make multiple cuts to create numerous horizontal strips on both sides of the rope. Fold the side strips, alternating from left to right. Place the second braid around the first and pinch the joints. Roll out the leftover dough to create petals, as shown in the video. Place three petals on top of the bread. Eggwash and bake at 350°F for approximately 40 minutes. Enjoy!

I tried to bake pizza on a regular baking pan, but I didn’t like the result
Homemade Pizza (Yeast Method) Ingredients: 1 1/4 cups warm water (284g) 1/2 tsp active dry yeast 1 tsp honey 1/2 Tbsp sea salt 3 1/3 cups all-purpose flour, (400g) 1 tbsp olive oil Instructions: Mix water, honey, salt, and yeast in a bowl. Let the mixture sit for 5 minutes. Combine the flour and yeast mixture in a large bowl. Knead the dough for 2 minutes. Leave it on the counter for 30 minutes. Stretch and fold the dough three times every 30 minutes. Cover the bowl and let the dough rise for 4-5 hours. Then, transfer the dough to the fridge and leave it overnight or for up to 1 week. Turn the oven to 480°F and preheat it with a cast-iron pan. Transfer the pizza to the preheated cast iron and bake until ready. I’ve never tried to use other fruits. The roll is pretty sweet, that is why it is good with strawberries. Don’t use sweet fruits

It looked like it was going to be lovely. I am thinking the dough had too much moisture released as steam in the oven and required more deeper cuts to the center.
