Easy Sheep Feta with Farmer Jack Ford
Farmer Jack Ford takes us step by step to cultivate Sheep Feta at home with simple tools and extraordinary results.
Timecodes
0:00​ - Intro
1:23 - Bring 2 gallons of Sheep Milk up to 85 degrees
1:40 - What equipment you will need
2:04 - Inoculate milk with cultures - let sit for few minutes
2:56 - Stir in then let rest (1 hour)
3:20 - Stir rennet into milk for about a minute then let rest (30 minutes)
3:54 - Cut the curd with knife or cheese harp then let curds heal
4:30 - Put Curd into forms, fill while whey drains to lower level
5:33 - Harden off cheese with salt crust
6:42 - Work on brine 1 gallon of whey to 1 cup salt
7:40 - Add salted feta to chilled whey after 2 days
8:00 - Remove from brine - boom easy feta

    I'm surprised you use a full tsp of rennet. What rennet are you using and does it matter if it is lamb/calf rennet? I've been having some issues with things like mozzarella because there's virtually no recipes for using ewe milk and my curds keep being too firm from too much rennet. I even used only half the amount and it's still not really maleable.

    Wow your cucamelon plants are big. Do you have squirrels issues with cucamelon?

      Hi Christine. We have noticed the cucamelon plant has very few pests. We don't have a squirrel problem in our locations but we have struggled with rats and mice eating our veggies. Have you tried growing cucamelons in the past and noticed the fruit or the plant disappearing? This vine was remarkably happy. We'd love to hear how you do growing them this year.

      @@HumanesmartsOrg my cucamelon stems are so skinny like sprouts. It was growing on BBQ skewers in a cup. I took out today for hardening process for half hour. It was so windy and brought it in. One of the leaves got burned. I am not sure how it will survive when I plant it on the ground. The plant has quite long. I have 2 plants on 1 cup and 3rd plant on the cup by itself. Any suggestions how to harden the plants without killing it? It's so fragile

      ​@@chrischen9589 the vine stems are very skinny, but hardy as it spreads its roots more. Last year we transferred our starts, like you did, to a slightly larger pot and slowly transitioned them to the outdoors. Could take a week or longer depending on your climate. The vine you see in this pickling video was actually a volunteer. We watered it with an ollas. We made a short cucamelon growing video last year. Are your vine stems skinnier than these? instagram.com/tv/CAY-GAlDKZg/? Sounds like you are doing a super job! Fun to hear your growing story. ;-) Let us know how they continue to grow.

      @@HumanesmartsOrg OMG.... exactly like yours even the cup size. I have see through cup but mine are really long now. I had it wrapped around different skewers. Our last frost date is May 26, 2021 but not sure how to I untangle tendrils & transplant them to the ground. I am sure I am going to break some stems. There are 2 plants in 1 cup and 3rd plant by itself. Should I plant them three close to each other? Thanks for letting me know. There is hope

      @@chrischen9589 Your vines sound super happy! If they are tangled, you may want to leave the vine be and encourage the end to move up your lattice or structure. Our climate is quite warm but from our understanding, cucamelon vines do not tolerate cold weather well. We hope this is helpful. You are on your way to a wonderful bumper crop of cucamelons. ;-)
