There’s actually a few steps to stopping that from happen from past experience of making thee best burger/cheese burger 1. Don’t overdo it and make an actual ball when forming the patty you want small pocket holes around it for the patty to breathe 2. Leaner meat (PAUSE) makes it shrink less so 80/20 is good 3.Medium heat is perfect just let the pan heat up for a few minutes than place the patty 4. Don’t press down on the patty

@@sandrad8291 Yes I am 100% positive both are still open and operating. Reason why you see just one of the brunch spots is because you’re closer to one than the other. I’m way down south so I saw both pompano close at 2:30 on the weekends not 2 my bad.
