Lomo Saltado in the Air Fryer
In this video I’ll show you how to cook up that popular Peruvian dish, Lomo Saltado in the air fryer.
This dish is one of my favorites which has beef, tomatoes, onions cooked together and served with fries and rice. Double carbs never tasted so good!
Lomo Saltado is tasty dish which was is influenced by the Chinese stir fry way of cooking by Chinese immigrants in Peru.
So although it’s a stir-fried dish, we’ll cook it in the air fryer.
Although stir-frying is the ideal way to prepare this dish, the air fryer does a great job, with less effort, IMHO.
INGREDIENTS LIST:
About 500g/1 lb of beef (I used sirloin)
1 medium/large Onion sliced into about 1/2 to 1/4 inch / 5mm slices
2 medium Tomatoes cut into wedges about 1/2 inch/ approx 1cm wedges
Cilantro
French Fries (approx225g/ 1/2 lb.) I used wedges but any fries would do. Seasoned as you like
Cooked rice - 600 - 800 grams (each serving should be about 150-200g of rice)
SAUCE/Marinade:
1/4 cup Apple Cider or White Vinegar
1/4 cup Soy sauce
2 Aji Amarillo peppers ( ( seek alternatives (or hot sauce) chopped
Ginger - 1 tablespoon
Cumin- 1 teaspoon
Garlic (2 cloves crushed)
S&P (pinch)
Please note that for this recipe we will cook everything in the air fryer with the exception of the rice, which won’t be covered in this video.

I made this about 2 years ago from another online recipe. Like I always say, when you do it the first time, you know what NOT to do the next time. The recipe I followed called for way too much vinegar for my liking. So the next time, I lessened the vinegar amount and added crushed red pepper (as Ken suggested) and as the recipe included. IT WAS DELICIOUS. I haven't bought another jar of Sabrett Onions in Sauce since. BTW, I only eat Sabrett hot dogs in natural casing and I fry 'em up to make the skin crisp... YUM.
