I never use russet potatoes for potato salad because they are mealy and fall apart easily. White rose have always been my potato of choice for potato salad. Cooking them whole and then cutting them when they cool is the best way to keep them from falling apart. I also could never raise my own beef. All of my mom's family were farmers and had there own cattle and milk cows. There is nothing sweeter than a cow and I used to bottle feed some of the calves at my uncles. We raised our own chickens when I was a child for both eggs and eating. I became very attached and I would cry and beg my mom not to kill each one......I remember saying "that one is my friend". I am far too tenderhearted . I too am type 2 diabetic and love celery and cream cheese, sometimes I add walnuts. I have not eaten potatoes since being diagnosed almost 5 years ago and now make a faux potato salad with cauliflower. Pretty darn close to the real thing but how I would love some of the real deal.....lol. So glad I found your video. I hope your channel grows. Good luck!
I really watch my starches and how they raise my blood sugar. My latest a1c was 5.6!! Focusing on protein, fiber and veg is working for me. I miss bread and rice but allow myself to have it occasionally. I used to be on insulin 5 times a day. I'm still working on my cholesterol. That's hard. Thank you for engaging!

It was smoked. Is that bad? I know like cured bacon it often has added sugars.

A for effort however you were supposed to push the beans down so that they are just under 1/2 inch headspace. Put hot water in until it reaches a 1/2 an inch of headspace, release the air bubbles, refill with hot water if the water is no longer at 1/2 inch headspace. When adding the lids, they should be finger tight. Quart jars should be for 25 minutes, pint jars 20 minutes. Once the canner says off, unplug the machine, leave the jars in for an hour then remove the jars. Hopefully that helps the syphoning 😊

This is a great dish! I typically use ground pork in mine, but either way it is yum. My parents grew up in Findlay and then moved to Dayton when they married ; they moved here to northern Maine in 1960. So I've got lots of cousins in Ohio (assuming that's where you are with a Dayton shirt) :) Congrats on all the videos! That's quite a testament to your dedication in eating healthy and well. continue the fight!

Thanks for your review of this recipe. Once I've used the meat up that I've already taken out of the freezer for the week, I'm going to try to remember to give this a try. I had canned some salsa verde last year using up my green tomatoes but I've never eaten it before, so this will give me a good reason to open up a jar and give it a try. I LOVE grits (and corn meal mush fried up and drizzled with maple syrup) but I've not tried flavoring them with anything but butter, s/p. Can't wait!

Thank you! My sleep got all messed up. I had an event I setup for Sunday and was exhausted and slept in my chair all day and went to bed early so then Monday night I was in bed early again so I was up at 12:40 and couldn't go back to sleep. Today I'm back on track and went at 4:30 before work.

Don't be afraid of scallops! They are the easiest seafood to cook. The only way to ruin it is to overcook them. 🙂
