Ingredients
For the Chicken Marinade:
500g chicken (bone-in or boneless, as preferred)
1/2 cup plain yogurt
2 tbsp ginger-garlic paste
1 tsp turmeric powder
2 tsp red chili powder (adjust to taste)
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
For the Rice:
2 cups basmati rice (soaked for 30 minutes)
4 cups water
1 bay leaf
4-5 cloves
2-3 cardamom pods
1 small cinnamon stick
1 tsp salt
For the Biryani Masala:
2 large onions (thinly sliced and fried until golden)
1/4 cup fresh mint leaves (chopped)
1/4 cup fresh cilantro leaves (chopped)
1 cup plain yogurt
2-3 green chilies (slit lengthwise, optional)
2 tbsp ghee or oil
1/4 tsp saffron strands soaked in 2 tbsp warm milk (optional, for color and aroma)
