The switchover regulator can be thought of as two pressure regulators in a single body. The arrowed knob adjusts the pressure of the front regulator. The following video should help explain: ua-cam.com/video/7PdMT1hhcmU/v-deo.html

You should use a stainless steel system for high purity gases.
So, it's not a left side right side. the system automatically turns to the next tank right? Do you change out the primary tank and trun it back?
Correct, the sytem automatically pulls gas from hte secondary side when the primary side is low. You would only turn the arrow after the side goes empty.

Hello, can I ask what size of union fittings you are using for this MFC?
The fittings shown are 1/4" Swagelok fittings. The body comes with FNPT inlet/outlet connections and we can attach a variety of fittings.

Does the regulator knob (Large Arrow) actually control the gas flow? Or is it used as an indicator to visualize which side of the bank is supplying gas?
The regulator knob with the large arrow is used as an indicator of which side is the primary side. The knob adjusts the delivery pressure of the right side cylinder, typically from about 175 psi (pointing to the left) to about 225 psi (pointing to the right). The left side is typically set to 200 psi. The gas will flow from the side that has the highest delivery pressure. The primary side will supply the gas until the cylinder pressure drops to the switchover pressure and then gas will start to flow from the other side.
What happens to the mass flow rate in a dual stage regulator when it maintains a constant delivery pressure , however the cylinder pressure keeps on decreasing
