I agree up in Eastern NC and I am 57 years old. When I was little My Grand Father cooked while hogs by digging a hole and he had a Grate and a tin cover and the sauce was vinegar and crushed red pepper and salt and a little black pepper. Cooked it with wood and it was some of the best Barbecue I ever had. Now every one has fancy pig cookers and cook on gas but a few on charcoal and trust me the charcoal is better. Sometimes simple is better. Also the pigs were raised by him and they want white hog house pigs and I think that made a lot of difference. Not knocking what you are doing. Maybe he put some brown sugar but I don’t remember it. Maybe molasses. All I know is it was good and that is how everyone did it back them.
When you see someone lining their grates with aluminum foil to "BBQ" keep moving 😂😂😂😂 That clown has no idea how to bbq 😂😂😂🤦

Yes, they always remove them.
Looks like you've got a pretty thick one in this clip. I'm asking if it's within the rules to separate the entire spinalis, serving the eye of the ribeye and the spinalis instead of it being whole? To make it clearer: in one Styrobox you've got the eye of ribeye and then (like 1 cm away of space, as in the air) the spinalis.

Impossible to cry for the hog losing its piggish life its role as food for people was fulfilled.
The hog was put to good use, it had the right to be killed and eaten and that was its only right.
What type of cooking grids does your Corten steel version come with? (Stainless steel, nickel plated steel, chrome plated steel, cast iron, or other) Also, if I order the wheel kit, does it already come assembled with the wheels or will I have to put the wheels on the Roughneck?
@iamfiredup Stainless steel grates. Them boys are THICC & Heavy!! I love my roughneck!! I ordered the Fully loaded Corten, and it came fully assembled strapped & shrunk wrapped to a pallet. It actually arrived sooner than I had originally expected, was worth every cent!! The convection & airflow is no joke! It can also fit narrow splits as well! I You can, get one! It's all American: Labor, build quality, and materials. The lid and the door were perfectly aligned, and the tolerances were exact. I burned mine in & seasoned it as soon as I got it home, and put it to work the very next morning! And held temps like a champ! I hope You'll Love using Yours as much as I've enjoyed cooking on mine! I would recommend getting the cover & ash pan along with it though. The ash pan saves a lot of hassle on the cleanup after the cook. Have a Merry Christmas!

@@Two_Bit_Smoke I wanted one so bad when they released it to the public over a yr ago, but I didn't have the savings to afford it. The early ones came with cast iron grates. I wish I could get those for mine, but I can't seem to find them anywhere unless I buy a different brand, and cut them down. Which I might do.
