With a single speed mixer, you need to do a 20 minute autolyse at the start. This will significantly reduce the mixing time and avoid the high dough temp issue.

if you could keep your dough under 19 degrees its much better, try using ice water.

While ooni has been really good at sending replacement stones for me.. I've had the back stone crack 3 times now down the middle... Doesn't happen on gas, seems it's like the direct heat from the wood hopper is too much for the rear stone

We bought a new cooktop for less than half the price from IKEA that looks and performs so identically that it is maybe made in the same Chinese factory.

Hello, please I have just purchased this same biologic blender. But when I am blending the bottom will be shaking and even want to move out away from it position,. And my blending isn't use to be very smooth. Please if you wouldn't mind, kindly guide me on how to operate it. For example when blending dry ingredients where should I set? And wet ingredients where should I set?. I am scared because I don't want it damage again, I bought two blenders just writhing 1 and 2 months they all got spoiled. I need help on how I can operate this biologic please. Thank you

Hi... I've a maxima msm8, and is not very good machine.... For idratation dough up to 75 or 70 is a bad machine... So, i use for high idratation all precaution and is very difficoult do it... I make once a 80% but it take 25 minute... Not good machine... Thanks
