I am a mother of two sons, one daughter-in-law, four grandchildren, one great grandchild, one grandson-in-law, and his sister, whom I have claimed as my adopted granddaughter! I have 3 small dogs, whom I love dearly. In fact, I am a HUGE animal lover!! I have been a hairdresser for 38+ years. Cooking has always been a passion of mine. I was taught to cook at a very young age by my Mother. My real passion is baking. I have made numerous wedding cakes, not to mention all types of sweet goodies!! This is another old recipe for a delicious Persimmon Cake!! Very moist and delicious!! Very easy to make!
RECIPE:
1 1/2 CUPS SHORTENING
3 EGGS
1 TSP SODA
1/2 TSP SALT
2 1/2 CUPS SUGAR
2 TSP ALLSPICE
3 TSP CINNAMON
2 CUPS WALNUTS
2 CUPS PERSIMMONS (4)
2 CUPS RAISINS
2 1/2 CUPS FLOUR
CREAM TOGETHER SUGAR AND SHORTENING. ADD EGGS. ADD ALL DRY INGREDIENTS. ADD NUTS, RAISINS AND PERSIMMONS. POUR INTO GREASED AND FLOURED LOAF PANS. BAKE 2 HOURS AND 20 MIN AT 250*.

DeDe bought the recipe all the way from Jamestown, New York to California with her when Lucy's family moved out west to Calfornia.. I wish you would’ve shown how you prepared the persimmons. Do they have seeds, did you have to peel them, did you purée them in a blender etc.?
I’m sorry but they ooze out of the peeling. You just make a slit and the pulp comes right out. The seeds are very large and very easy to remove. There were only 3 in each persimmon I believe. They need to be very ripe and when they are, they are very soft and mushy. I didn’t do anything to them other than squirt them into my measuring cup. If you notice when I added them to the batter, they are very liquid. Thanks for watching and I hope this helps.🥰

Hello Lady! I have never tasted a persimmon. No sure they even sell them here in our grocery store. This looks like a bread. Does a fruitcake maybe sound like what it may taste like? Just guessing really. You and Clayton are certainly a great couple. So happy for you to have him for your hubby. You take care, hope to see you really soon too.
Persimmons are so delicious Cindy. I prefer the Japanese persimmon, Fuyu. They are sort of flat and can be eaten before they are fully ripened. They are crunchy and so sweet when you eat them before they get fully ripe. Some varieties of persimmons have to be completely ripened before you can eat them. Otherwise, they will turn your mouth wrong side out! The variety of the one that I made the persimmon bread with, you can also eat before it gets fully ripe, but I’m not sure what variety it was. The two that I used in my video were very ripe and they are just like mush when they get like that but super sweet. The recipe I think probably should be considered a bread rather than a cake. I thought about it later what it reminded me of, and I recalled the candy orange slice fruitcake that my mother used to make. It reminded me somewhat of that. I am going to make one of those this winter, and when I do, I will video and post it. I am truly so blessed to have Clayton as my husband. We truly enjoy each other all the time. We are visiting his children in Missouri, but when we get back home, I will make another video and try to get it posted. You take care and as always, it’s so good to hear from you.❤️❤️❤️
I've never tried Persimmons before. Looks good Joyce. I know about computer problems. Once about 17/18 years ago a virus got in and fried the hard drive. At that time it was cheaper to replace the hard drive and have the whole computer cleaned. I'm going to try the Pam wih flour instead of Bakers Joy. I had to throw away a whole bottle of Bakers Joy because it wouldn't spray right even after I cleaned the nozzle good. I got the same mason cups salt and pepper shakers.
I absolutely love persimmons. I actually like the Japanese persimmon because you can eat them before they get real ripe. They are so good to me. I’m really glad to have my computer back. I have felt lost without it. The Pam spray with flour works very well. I’ve never had an issue with the Bakers joy though. I hope the Pam spray will work well for you. Great seeing you back in the kitchen cooking. I am assuming smooth peanut butter would be fine with this recipe. As much as I love nuts, I have never liked the crunchy peanut butter. John lost all the shingles on his house but God was good and no trees on his home. Michael's home had no damage. They actually had a very nice baby shower a few days after the storm and his generator kept everything running smoothly. Charles had some limbs, small trees, and such down and no damage to his home. We had 4 oak trees uprooted but none harmed anything but our feelings. We lost some shingles and siding but we were still able to remain in our home. Thankfully we have a generator that kept us very comfortable. We were the only ones with internet service but ours is through wireless satellite. No power for 12 days and Charles was 18 days. I became so emotional about the loss of so many trees and damage to peoples homes that Bob became extremely concerned for me. God is So Good! Love y'all ❤️
I’m so glad to hear that you all did not receive a lot of damage. I know it could have been so much worse than what any of us experienced. Yes, you could use smooth peanut butter. On the other hand, I prefer it to be crunchy. It would not make any difference whether you use crunchy or smooth. They are so good Rose, you must give them a try! ❤️

Glad to see you back and you all are okay. Helene was an awful storm. We got some of it but not the bad part of it but we did get Milton bad. It was the scariest storm I have ever been through. God is good. He protected me and my daughter and our furbabies. My feral cats I feed even made it through unharmed. I prayed for their safety more than my own. My daughter was without power for 3 days and her house got a little flooded but her boyfriends Dad lives close by to them and didn't lose power so they went there with their cats. I lost power for 20 minutes and then it flickered off and on throughout the hurricane. Cookies look good and peanut butter is protein so they will be good for your diet. 🤣

Hi Cindy!!! I feel like I haven't published a video in a year!!!! It has been insane around here!!! Our fruit trees did survive and I was so thrilled that they did!!! Our next door neighbor has a large satsuma tree and it got split in half by the storm. It is loaded with fruit and my neighbor said she hoped the fruit would still ripen. Afterwards, she said they were going to have to cut it way back. We some friends in Douglas, Ga. that a large tree fell on their house causing a lot of damage. It was really devastating in that area. It truly looks like a war zone!!! Such a tragedy for the people in the Carolinas, TN and Va. So much loss in those areas. It is really good to hear from you. Hope you and Mike are doing well. I'm glad you guys survived the storm. I grew up in GA, and our roof was also hit by trees leaned over by a funnel that touched down in our neighborhood. That was back in the 90s. After 2020, I started watching prepper channels, to make sure we'd always have supplies if our power went out for an extended period of time. Well, Johnny, I have discovered how dependent I am upon electricity, social media, Internet, cell phones… Etc. etc. etc.! This has caused such destruction in such a wide range that it is hard to imagine how we will ever recover from all of this! You’re right I’m sure about some of the smaller towns in North Carolina never being able to recover. It is so heartbreaking to see all the damage here which came from wind, but there with all the flooding was extremely devastating! How long would i water bath chili with meat?
I would definitely pressure can the chili. It would contain more meat than the vegetable soup I can. When canning with meat, you have to be very careful so that you don’t get botulism. If you have much meat in your soup you would need to pressure can it. Otherwise, you may get botulism, which can be fatal. My soup has a lot of tomatoes in it, which is high in acid and very little meat. Thanks for watching!🥰

I really appreciate your prayers for Darryl, but he unfortunately lost his battle and went home to be with the Lord not very long after that video. It was very heartbreaking. He had Covid and then had a stroke which took him out probably a month or so later. 🙏🥰❤️

I lost mine 13 years ago and I still miss her terribly. My mother was a seamstress all of my life. She sewed for the public, so I learned to sew at a very young age. I have been a hairdresser for over 40 years now. I celebrated my 40th anniversary of doing hair, March 6. This is really good soup, and I hope that you will give it a try. When my oldest granddaughter gets sick, she always wants my vegetable soup. Therefore, I always keep it on hand canned in jars. You can also freeze it. I prefer canning it in jars because then it’s ready instantly to heat and eat. I am assuming from your UA-cam name, that you must have a pug. I absolutely love my little fur babies. Cannot imagine my life without them! My Lilly is the smallest of my four dogs, but she is the loudest! She is a miniature schnauzer and is very bossy and jealous of any attention that they may get from my husband or I. Perhaps cooking the strawberries in a saucepan with 1 Tablespoon lemon juice, 1\2 cup sugar, and 1\4 cup cornstarch per pound of strawberries, then grinding them and adding the cream and milk with a little more cornstarch. also putting some chocolate shavings on top would add some yumminess

No I don’t. I would suggest that you slice your apples thicker than I did mine because they are soft when you finish canning them. They are really delicious…like eating apple pie in a jar!!😋 Thanks for watching!!🥰
