Croissant Coconut Cream Pudding
Ingredients:
2 eggs
1 cup milk
1 cup coconut cream
1 tsp cinnamon powder
2 tbsp sugar (adjust to taste)
1 tsp vanilla essence
4-5 store-bought croissants, halved
100g cream cheese
½ cup powdered sugar
Chocolate wafers or dark chocolate (for decoration)
Optional: Extra powdered sugar for dusting
Method:
1. Prepare the Custard: In a mixing bowl, whisk together the eggs, milk, coconut cream, cinnamon powder, sugar, and vanilla essence until fully combined. Set aside.
2. Assemble the Croissants: Grease a baking dish and arrange the halved croissants side by side. Pour the custard mixture evenly over the croissants, ensuring they soak well. Cover the dish with foil and let it soak for at least 30 minutes or overnight for best results.
3. Bake the Pudding: Preheat the oven to 160°C . Bake the croissants, covered with foil, for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the top is golden and crispy.
4. Prepare the Coconut Cream Topping: While the croissants are cooling, blend together coconut cream, cream cheese, vanilla essence, and powdered sugar in a blender until smooth and creamy.
5. Serve: Pour the coconut cream topping over the baked croissants and let it absorb. For decoration, crumble chocolate wafers or dark chocolate over the top and drizzle some extra creamy sauce. Dust with powdered sugar if desired.
6. Enjoy: Serve warm and enjoy this indulgent croissant dessert!
