- 3 cups (360g) all-purpose flour
- 2 cups (400g) sugar
- 160g canned coconut milk
- 4 eggs
- 250g butter
- 120g cooled melted white chocolate
- 120g Sour cream
- 2 tsp vanilla extract or coconut flavor
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
**Frosting:**
-165g Cream cheese
- 570g icing sugar
- 100g butter (softened)
- 1 Tbsp vanilla or coconut flavor
- 11/2 cup desiccated coconut

Why do we put it in the fridge?
This helps the gluten relax and the pastry ingredients come together nicely. Then it makes it easier to roll the pastry.

Thanks for stopping by, I bake Nigeria meat pie for decades without castor sugar. I decided to try it with castor sugar and l like it. It is your choice, you can decide bake it without sugar.

Thanks, you don’t taste the eggs at all. The eggs are for the texture of the pastry but you can make it without the eggs. Hope this helps 😅

Why did you add sugar in your flour?
Just to make the pastry a little sweet but you can decide not to add it to the flour. The meat pie will still turn out very good.
