“Meatloaf Odessa style.”
Incredibly tasty “Odessa-style meatloaf” is one of the most striking dishes of Odessa cuisine. It is prepared quite simply, and the taste and effect it produces is simply impressive.
Most often, meatloaf according to this recipe is prepared for the holiday. In Odessa, they love holidays very much, and despite the fact that everyone is constantly trying to monitor their weight, delicious dishes, and especially according to old, time-tested recipes, are always in trend.
Excellent taste and divine aroma - this is what can make you not wait for the next holiday, but treat yourself and your loved ones with this wonderful meatloaf.
It is good not only for the holiday table, but also for a morning breakfast or a lunchtime snack, when a slice of meat becomes part of a hot sandwich, for example.
Preparation takes very little time, but the pleasure is simply indescribable)

“Meatloaf Odessa style.”
Products:
1.
Pork pulp in one piece 2kg
2.
Salt
3.
Ground black pepper and peas
4.
Bay leaf
5.
Garlic 3 heads
2 tbsp mayonnaise
For the test:
1.
Vegetable oil 200ml
2.
Boiling water 200ml
How much flour will it take
Preparation step by step:
Cut the washed meat so that it has a uniform thickness, about 2-3cm
Use a sharp knife to cut a hole
Salt, pepper, add a clove of garlic and bay leaf
Rub a couple of tablespoons of mayonnaise over the bottom of the bowl
Lay out the stuffed meat
Cover with a towel
Leave for a couple of hours
Put it in the refrigerator for a day
Pour the oil into a bowl
Then boiling water
Immediately add flour and knead the dough
Sprinkle the dough with flour
Leave for 30 minutes
Roll the meat into a roll
We tie it with thread
Sprinkle the board with flour
Roll out the dough
Place the roll in the middle
We fasten the dough on the sides
Grease a baking tray with oil
Place a baking sheet with meat in an oven preheated to 180 degrees
Cooking time 2-2.5 hours
Remove the dough
Cutting the threads
The roll is ready
Serve with pomegranate and cashew sauce

«Мясной рулет по-одесски».
Продукты:
1.
Мякоть свиная одним куском 2кг
2.
Соль
3.
Перец черный молотый и горошком
4.
Лавровый лист
5.
Чеснок 3 головки
2 ст ложки майонеза
Для теста:
1.
Растительное масло 200мл
2.
Кипяток 200мл
Муки, сколько возьмет
Приготовление пошагово:
Вымытое мясо разрезаем так, чтобы получилась равномерная толщина, примерно 2-3см
Острым ножом прорезаем отверствие
Солим, перчим, вкладываем зубчик чеснока и лавровый лист
По дну миски растираем пару ложек майонеза
Выкладываем нашпигованное мясо
Накрываем полотенцем
Оставляем на пару часов
Кладем на сутки в холодильник
Выливаем масло в миску
Затем кипяток
Сразу всыпаем муку и замешиваем тесто
Присыпаем тесто мукой
Оставляем на 30минут
Мясо скручиваем в рулет
Обвязываем ниткой
Посыпаем доску мукой
Раскатываем тесто
На середину выкладываем рулет
Скрепляем по бокам тесто
Смазываем маслом противень
В разогретую до 180 градусов духовку кладем противень с мясом
Время приготовления 2- 2.5 часа
Снимаем тесто
Срезаем нитки
Рулет готов
Подаем с гранатовым соусом и кешью

    Сначала надо лук обжаривать минуты 2-3 , пока не появится характерный запах , только потом добавлять морковь и прочее. Положив все одновременно , вы не дали луку карамелизоваться. Попробуйте как я вам говорю, убедитесь - запах и вкус будет совсем другой
