Can I just continue to kneed it in the mixer? Or do you recommend that I take it out and do it by hand? Just asking because sometimes it's just preferaposand not needed... thank you in advance❤

I prefer using stand mixer with dough hook for while to make sure all ingredients are combined and some of the kneading is done in the stand mixer. I like to finish kneading by hand because I get a better feel of the dough texture that I’m satisfied with. However, you can use the stand mixer for majority of the mixing but still finish off kneading by hand for best results. Thanks for reaching out and let me know if you have any other questions. Thanks

Your recipe is super easy and great instructions. I have made these twice now and came out perfect. My coconut milk was a little thick so warmed in microwave for about 1 min. Used 8 ounces of it. This was delicious combined with my refried stew beans and cheese. Thank you so much Nikki❣️ passing this on to my daughter and my daughter-in-law.

I never ever herd of cutting powder buns open but some people do things differently. I like my buns them ruff that's how I know from growing up. Never made them myself but I plan too some day. I like it with just cinnamon and nut me all that extra essence I don't like but I am sure it's nice.
I had the version you mentioned as well. I love them both!

It's crazy how Belizean are using evaporated milk now, it was just coconut milk!
It’s a matter of preference and using what you have available. For me personally it makes it more creamy and rich texture I prefer. However, you can use only coconut milk.

i never understatement why the cassava can’t be boiled first instead of laborious Hand Gratering!!
I believe that it will have a completely different texture. The starch from the raw cassava allows it to firm up. However, you can blend the cassava for easier preparation.
