Easy Beef and Chinese Broccoli Stir Fry | Restaurant Quality at Home
## Beef and Chinese Broccoli Stir-Fry
**Ingredients:**
* 300g / 10.7oz Chinese Broccoli (Gai Lan)
* 300g / 10.7oz Beef (less connective tissue cut)
**Instructions:**
1. **Prepare the Beef:**
* Slice the beef against the grain, about the thickness of a coin.
* Marinate the beef: In a bowl, combine 1/4 tsp baking soda, 1.5 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1 tsp dark soy sauce, 1 tbsp Sa Cha sauce, 1/2 tbsp cornstarch, and 3 tbsp water. Add the marinade to the beef in batches, massaging it in until sticky. Drizzle with 3 tbsp cooking oil and let it rest for 30 minutes.
2. **Prepare the Chinese Broccoli:**
* Separate the leaves from the stems.
* Slice the stems into even pieces.
3. **Prepare Aromatics:**
* Slice ginger.
* Mince garlic.
* Chop white parts of scallions.
* Prepare chili peppers (amount to taste).
4. **Stir-fry the Beef:**
* Heat a wok or cast iron skillet over high heat.
* Add 4 tbsp cooking oil. Once smoking (around 302°F), add the marinated beef.
* Spread the beef evenly and let it sizzle until the edges change color. Flip and cook until medium-well. Remove and set aside.
5. **Stir-fry the Chinese Broccoli:**
* Add another 2 tbsp cooking oil to the wok.
* Add the ginger, garlic, scallion whites, and chili peppers. Sauté until fragrant.
* Add the Chinese broccoli stems. Add 1 tbsp water to create steam and cook faster.
* Once the stems are almost tender, add the leaves.
* Stir in 1 tbsp fish sauce.
6. **Combine and Finish:**
* Return the beef to the wok. Stir everything together.
* Gradually drizzle in a cornstarch slurry (mix cornstarch with water) to thicken the sauce.

It's perfectly fine to marinate the meat and leave it in the refrigerator overnight.

I used Lee Kum Kee oyster sauce, but you can choose any other brand that's available to you!

It is a lovely recipe so much flavour and easy to make I put some broccolini in mine and I used rump cut against the grain makes it very tender lovely recipe

Baking soda first then after tenderizing (30 min or so) WASH that off before marinating
