So to answer the question about the hand signs: in JJK while they do not need hand gestures to cast Jujutsu techniques, hand signs, chanting and even dancing are used to essentially make the techniques stronger or more efficient. This is why Sukuna has multiple of every body part, so he can chant and do hand signs while fighting. That and I assume to do Domain Expansion you need hand signs.
