I'm converting this 825 sf. garage into a small 3 Bedroom home over the next 12 to 18 months and will record all of it in detail to help other DIYers or Beginners save a lot of money by also doing themselves. I'll have long winded discussions about my local codes in the latter part of each video.

why put P-traps on the sinks just in front of the air gap?
Hi, I stated in the video that they were not necessary but I only put them there on each one to gain some heihgt back. See everything was very tight, didnt want to raise the sink up too much it it would be too high for function but I needed every inch I could get to have a 3" air gap and all of the items necessary, 3" air gap because my air gap had to be twice the diamter of the pipe, I forgot to mention that in the video. So anyway by using a trap on each sink compartment the traps come down and then back up after they make the turn where as if I had just used a 90 elbow i would of had to come down a little further and I would have lost an inch or more of height vs using a trap that goes down but then turns back up.
My ofter question is why did you delete the flow restrictions on the grease trap?

My question is why did you put a trap on each sink?
Because it gave me more clearance inches back by a trap first going down and then back up instead of a little longer pipe going down and then just making a 90 degree turn, see that trap goes baup up after making the turn so therefore the pipe is now higher than what it would be if I just made a turn with a 90 fitting, things were so tight in fighting for clearance that something that tedious made a difference and since each drains individually then theres nothing against doing that,
You mentioned you have another sink that meets the American Disability Act, can you do a video on how you did the piping for that one too!
Hi, we sold the Restaurant to a nice Gentleman and though I turned an old hair salon into this Restaurant myself, we no longer own it and I have to ask to make videos in it now, so I may ask him to make a video on that in the future but it will be a while if I do. Some good news for you is that I made a video while I was there making this one of the ice machine I put in without a floor drain also and it has basically the same type of plumbing as the other service sink, I'll have it uploaded in the next day or two. I'm super glad to hear it helped you. I'ts the only reason I started this channel, I've had to fix many complicated problems over the years and this is just one of them. I saw no affordable solution until I found that exclusion to raise up the height of the Sink. I'm super busy but if I get the chance I'll post more details like the exact code location and sorts. I don't have a restaurant we have a ice cream shop, but because We are going to serve banana split, they recuire a 3 compartment sink, and our place doesn't have any floor drain, we don't going to cook anything, at all but just for handle fruit or veggies they ask for that,
