Love the tutorials. On your workspace, there is a tab for the graph editor, called 'Flow' - is this a 3rd party extension? It looks much more intuitive than the native Graph Editor.

For the first one you can select the path and go to Window>Create Nulls From Paths. Then parent the Nulls of the points you move to one Null. From there on its easier to animate without having to select them one by one each time.
