    I would have expected in this day and age that machines would remove the entrails...are the entrails important to the fermentation? Can one eat the entrails?

      You can buy them as filets or as whole fish. The whole fish has been gutted, I was a bit incorrect there, but they have left a membrane that holds the roe if the fish is female. The roe is very tasty so we who eat surströmming wants it to be there. /Åke

    Very nice video. I am now curious to try surstromming...I could see how it might taste ok with potatoes, onions, yogourt and bread......I might be tempted to use sour cream...

    Tried this for the first time a week ago. Did like you said, opened it under water. Ate it with flat bread and onions and sour cream. It was delicious

    Its odd to see that they use the big ones. Usually you only want the smaller ones so that you can easily eat bones and everything else except the entrails. Like that's almost sill(herring) already and not strömming(Baltic herring). For those that don't know there is a huge difference in the fish even if its the same fish when conserving it or preparing it, like over here in Finland we throw back the big ones or use em as bait fish.

    I never tried Surströmming but it honestly doesnt look that bad. As a kid i used to eat all kinds of fish that were bitter beyond imaginable so i feel like i kinda know what to expect if i were to eat it

    So this is the 1st video I have seen where the person attempting to eat this not only did not regurgitate it, but seemed to actually kind of enjoy it. I love Stinking Bishop cheese which makes Limburger cheese seem mild and not potent, and I have had preserved 100 year old duck egg, & fermented bean curd and fermented pork. I also enjoy a good blue cheese. All of these have intense flavors, and many of them are the 'Top of the Do Not Like This Food 'list with my friends. Thx for making this sound more appetizing. With that said, I would not enjoy the texture of this fish, and if it were a different texture, I may try it. Is there anything like this in a Jerky form?

    I have to say the other videos I've seen of people with these, the can is all sorts of puffed up so no wonder it smells bad, also the fish werent fish anymore, more like fish liquid

    Well done - excellent presentation, thank you for the understanding I now have. I've just finished laughing myself silly at the other videos to the point I couldn't breathe! 🤣😂🤣 Your presentation here surprised me as I wouldn't have had any clue of the correct way to eat it. Not that I intend trying it any time soon but at least I know it makes some sort of sense now. Thanks - from a Vegemite lover in Sydney Australia. (P.S. best way to eat Vegemite for a newcomer is to spread it thin on buttered bread as a sandwich and develop a taste for it. It is very salty so start thin and work up on the thickness over time as you like. Having too much too soon will turn you off it. We were all brought up on it so we know no limits with the stuff. Worth a try, the right way!)

    I think also just the idea that you're eating "rotted fish" already is a big turn-off for some people. I mean, I am Dutch, we also have slightly ripened herring (soused herring, although I don't think its really fermented, as its just brined for a few days) and some people are already weirded out by that. Although the Dutch herring is probably a lot milder that this one and is perfectly fine to eat on its own with just some chopped onions. :)

    TL;DR: Bad smell, but nothing like in most videos where people gag and throw up. Taste is okay. I am from Russia. I've heard and watched enough about Surströmming over years to become curious, so finally I ordered it. Got myself a nice 440 gram can of Oskars Surströmmingc fillets. The price is insane for a can of fish - $50 (4200 Rubles), but manageable for a one-time treat. Long story short, I did everything as you showed, and indeed it's not so bad. It smells like farts, but the smell isn't that strong, frankly, not even close to gag-inducing. The taste is interesting for sure, and not even bad, just unusual. Besides smell, the only real issue is the amount of salt. It's so salty that I will double the amounts of other "sandwich" ingredients next time. Conclusion: all the drama around it is pretty much bullshit.
