    Pretty good video, wouldn't call it a documentary though, as documentaries typically are around an hour long at least, and this doesn't shed much of a light on the actual cheese making process.

    Does the treatment of the cheese during aging (salt, pH, pressure, moisture, temperature) influence what bacteria and fungal cultures will grow on it or do they have to be specifically introduced?

      I'd say, yes, depends on the type of cheese you're making though, of course salt, Ph, pressure, moisture, and temperature would matter a good example is some of the cheese types that are aged in caves, and yes, some cheeses need bacteria or fungal cultures to be introduced into them, some don't, as in, some cheeses use the bacteria and fungus that is already naturally occurring in them, some need introduced bacteria and fungus, some don't use bacteria or anything at all, like queso fresco.

    when i go to a really nice restaurant, i do my research and if i see a picture that shows them giving a 3 once piece of meat---that is one restaurant i will not be eating at. to me, going out for dinner is a special occasion whereby i want to be pampered and given full portions of whatever it is i have chosen. i would not and have not eaten at a place serving "tasting menu" items... at 72 years of age, i really love "traditional, regional, international foods.

    This, I feel, is completely accurate lol. Im from Texas, and for some reason the food at my black friends houses always just hit different. (in the beeeest way omfg I miss it) I think all soul food is technically southern food, but not all southern food is soul food
