425g canned tuna 300g pasta 1L milk 400g can of sweet corn 1 onion 3-5 garlic cloves 60g butter 4 Tbsp plain flour grated cheese (use your discretion) panko breadcrumbs salt and pepper

Try that but with chicken thigh. Its the best part of the bird, chicken that is, not your mum
Generally I prefer thigh and I've tried it with this dish, for some reason I like the legs better, chicken leg not my mums

I was gonna make some smart arse comment like "WheRe's ThE RiCe WinE VinEgAr?" Then I saw the ingredients list. You got me. Also with the Chinese rice wine. You can also use 3-4 tablespoons of sweet sherry, but no sugar and no mirin. It has an awesome depth of sweetness. And also not traditional, which you seem to like ;-)

i always have portions of this in my freezer. my version with tuna garlic mushroom dijon nutmeg w cheddar on top learned in my first group house out of home

The ancient Greeks and Romans used fish sauce in like, every dish. It was called Garum. Then it died out in European cuisine until Wheaty brought it back.

an old Sicilian lady said to me once if you have stuff in your larder you can make Sauce. the only thing id do different is if you brown the mince first then remove and do the veg all that lovely oil from the meat goes into the veg and you can then re add the meat and de glaze with a glass of red or a cup of beef stoke. still looks mint though good work.

Why add the sugar to remove acidity then vinegar to bring it back
Sugar to settle down the tartness of the tomatoes. Vinegar at the end to brighten up the deep flavours from the long cook.
