Hello, this video was designed to help you choose the correct cooking mode and rack position for roasting vegetables in Convection. As a rule of thumb, allow approx 30 minutes for potatoes, 40 minutes for root vegetables and approx 25 mins for cauliflower. Brussels sprouts and mushrooms need about 15 mins and broccoli, kale and asparagus need approx 12 minutes. These are general guidelines but remember the cooking time will depend on the size the vegetables have been cut to. I hope this will be helpful. Larissa

Thank you for letting me know that my various videos have been helpful and congratulations on your new range. The CornuFe is not only beautiful it is a wonderful range to cook with. Because the ovens are smaller pay attention to timing and temperature especially when baking. Rather than opening the oven door set the timer in advance of the recipe time to check the progress. If your oven has a Bake mode, just use that mode and the recipe temperature. When it comes to baking the traditional Bake mode can give better results when baking a light delicate cake like this. Convection is ideal for baking several racks of cookies and roasting meats, poultry fish and vegetables. I hope this helps, Larissa

on this new FORNO range I bought it has CONVECTION HIGH BAKE AND CONVECTION LOW BAKE. IT SAID TO TURN IT UP FOR FIRST 10 min for prime rib and then cook it at a lower temp. Should I USE CONVECTION LOW BAKE OR CONVECTION HIGH BAKE? TY. The only setting on convection is convection broil.

I am happy to hear you enjoyed the poached eggs but sorry the cooking time was too long. So much depends on how cold they were and the size. Now that you know how easy it is, just reduce the cooking time by 10-30 seconds until you find the perfect timing for your oven. Also, if you make extras they actually reheat really well in the Steam oven.

@@michaellenard2 Hello Michael, The Steam mode in the Steam oven defaults to 212F the temperature at which water boils. For most steaming I leave it at this setting, when steaming more delicate foods you can reduce the temperature to 180 if needed. I hope your poached eggs turned out well. Larissa
What is the brand/model oven you use?
My ovens are from Gaggenau and I cooked the lamb in the Combi Steam Oven BS 470. Not only did the lamb cook to perfection they were just as delicious when reheated in the oven.

Hi there, this lady says to roast at 400°F for 15 minutes then you have to drop the temperature to 350°F for the rest of the cooking.
I love reverse searing method. The meat inside won’t be too raw while outside is burnt. I usually use a v hot pan to make cross marks which looks nice. Thanks for letting me know I can turn on high heat in last few minutes to finish in same oven

You can keep the humidity setting at 60% or drop to 30% (for a crisper finish) and increase the temp to 375. In time you will learn to use the combinations to get the results you want.

I have learnt great deal about cooking and cooking with a convection oven with this channe. It really makes a difference!
I just baked an apple pie in my Breville Smart Oven Air for the first time, with convection on. It’s fine, but I’ve decided for this deep pie I will not use convection next time. The top gets dark too fast before the bottom is done. I could also place a sheet of foil on top and I’m sure using a pizza stone or preheated baking sheet would also improve the results. I just don’t really see the benefit of convection in this case. Thanks for a nice video. You did share a lot of useful information.
Hi there, Happy New Year! I find that depends on the oven, the "convection" or "true convection" mode works well for certain items. When you use the convection mode the heat comes from the heating elements located around the fan. Perhaps the Convection-Bake mode in your oven was too strong.
