You would have loved soldier of fortune, at the time. The best I've seen is stuff like dismemberment in the Witcher (but at a time I cold see it loaded the model of a generic character, though) or zombies procedural destruction in left for dead. I can't remember the name of this game you're playing, though. Procedural demon damage in Doom eternal but kind of meh, in the end, plus the game was too gimmicky for me.
