Well, I really don't think these are properly done Kentucky banana croquettes, actually. The way we used to do it was to cut up the bananas in two or three chunks, (don't split them), use a rolling pin to crush your peanuts down nice and fine, not coarse such as was done here. Then you roll your banana chunks in mayonnaise and roll them in the crushed peanuts. And no, they are not " gross" like one commenter said. They are actually quite good. We used to have them with Christmas or Thanksgiving dinner. By the way, the video was pretty funny.
