Usually I need to experiment enabling and disabling channels and then looking to enable those channels until I have all enabled with Chip Player JS ( mmontag.github.io/chip-player-js/ ) and write on a text file and the perfect timestamp to change the status of the channels. With that information in hand, I use a command line program called vgmplay ( github.com/vgmrips/vgmplay ), it's powerful but requieres to compile it (source code to binary, a.k.a. an .exe), but there's other options like a plugin for foobar2000 (Windows only). vgmplay you need to enable and disable channels to generate a WAV file with a configuration file. Then I use Audacity to edit those segments and union all in a single WAV file using those timestamps and looking for the loop to cut, and finally using a video editor, in my case Kdenlive, to put the text and images. Generally it requieres to be in the perfect moment to be inspired, right now I'm quite busy but I have some Mega Drive song in mind to be deconstructed. I was inspired by carpathia808 in part because I needed the deconstruction of Ice Scream from Ristar and then I saw how to deconstruct and looked good that I decided to publish on the Internet. Why do you number the channels like Carpathia...? it's as easy as 0, 1, 2...
The thing is that, in this case, we have three "audio outputs" from different chips: the FM (YM2612/YM3438), PSG (SN76489, "8-bit") and the PWM. Each one of these chips does in a different way to generate sound*, so the best option is to count splitted by this criteria. *It's more complex and I prefer to not tell the differences between them in a more technical view.

How do you deconstruct songs like that?
First of all it comes the inspiration of how a song might sound great if it's deconstructed. Then I go to mmontag.github.io/chip-player-js/ to doing the combination of channels and write it out on a text file in what moment it's perfect to change the channels. When it's finished I download the VGM file, usually from project2612.org/. Next it's the "technical" part. I use VGMPlay, which requires some knowledge with compiling* a program to use it, to generate the sound files by silencing those channels in a configuration file: it's a text file which you can change the settings. This is by using a terminal emulator but there's a graphical way to do it. I tend to prefer more text-based tools rather than with a GUI for efficiency. And finally edit those fragments via Audacity and I export it. All of these steps it's with free and open-source software, so you can do it. *Compiling it's the step to transform the source code to something that works (an executable file, like an .exe) P.S.: If I recall correctly, Carpathia808 it does with a graphical way: ua-cam.com/video/hgFUMzmgwYE/v-deo.html

Psgs are the 8 bit channels?
Exactly. PSG are the 8-bit sound channels*. In the case of the Mega Drive/Genesis, which uses the SN76489, the channels 0, 1 and 2 are square waves and the 3 it's white noise (that hiss of the background usually comes from that channel). *The "8-bit" sound usually it's generated by PSGs chips (Programmable Sound Generators) in multiple forms (wave, square, triangle, sawtooth) and white noise.

Maybe those clean drums it's because they used a good sound engine or dithering for making the final PCM samples. Dithering, explained simple, is a technique that puts some noise that prevent some distorsions. I was looking a video to listen the PCM samples of this game and you're right. Also (talking about the capabilities of the console), Markey Jester did an awesome job with Sonic 1 Next Level ROM with the Act 2 and boss music fully in PCM.
