Freezer Meal Mastery: Perfect Breakfast Burritos Every Time
Breakfast Burritos are a quick and easy way to meal prep for your week ahead. These burritos are filling, delicious and can last for weeks if not months in your freezer (providing you’re able to stay away from them for that long). With just 30-45 seconds in the microwave you can have yourself a hot meal ready to hit the road with you.
Ingredients:
8 large eggs
1 Red Bell Pepper
1 Green Bell Pepper
½ Large Vidalia Onion
1lb Breakfast Sausage
8 - 8-10” Flour Tortilla Shells
2TBS Milk (for scrambled eggs)
1 ½ C - Shredded Sharp Cheddar
1TBS - Unsalted butter (for the vegetation)
Prep:
- Dice up your vegetables. I would do a fine dice on them. If you do too large of a dice it can be rather clunky and you could end up with big pieces of pepper piercing your tortilla shell
- Crack your eggs into a bowl, add your milk and then beat them thoroughly until the mixture has come together and you don’t have any of those stringy egg white parts
Cooking:
- Over medium / medium-high heat cook your breakfast sausage. I like to flatten it out as much as I can and let it brown completely before breaking it up. If you break it up too early you don’t get as much browning.
- Once complete pour the sausage into a bowl and set aside to cool.
- Return the pan to high heat and add a tablespoon of unsalted butter and then add your veggies. I cook them on high for a short period of time in order to help them maintain their crunch.
- After about 3 minutes create a well in the middle of your veggies and dump in your scrambled eggs. Once the eggs come together you can re-incorporate your breakfast sausage.
- Take your now cooked filling and place it in a bowl to cool completely. This step is VERY IMPORTANT! If you add the mixture to your tortillas while it’s still warm it will steam from the inside and create mushy textures. Gross.
Assembly:
Roll em’ up! I used a 2/3 measuring cup but you can make them as fat or thin as you want them.
Storage:
Wrap em’ up! Cut yourself squares of parchment (or wax) paper and roll each burrito individually. Store them in a Ziplock bag in your freezer.
Reheating:
Take 2 - 3 sheets of paper towel and soak in cold water. Take the wet paper towel and wrap around your frozen burrito and throw that thing into the microwave on high for 30 - 60 seconds depending on the thickness of your burrito and the strength of your microwave.

    enough salt in the mayo, like that you toasted the bread and sprinkled pepper. maybe fine grate some asiago. I tried it with balsamic vinegar syrup too. mama grows the tomatoes. the big ugly heirlooms are the tastiest. I use Pepperridge farm farmstyle oat bread. delicious toasted

    Heard about this uniquely US dish so often. Never really felt too curious about it. But out of the blue today I thought let's have a look, see what it is and how it's done. Like any Australian chef, raised true from convict ancestors, I'm proudly stealing this to add to our multicultural melting pot of stolen foods we love. Hope you won't mind if I change it up a bit, try some crispy pork belly or well seared little cubes of beef instead of the ground meat, maybe hit it with some south east asian spices which I feel about the same way you seem to feel about hot sauce. It goes in everything, right?

    😋 but I always remove the cooked sausage on a plate with a napkin then add the flour to the sausage grease in the pan and cook that flour until it’s golden brown then add the milk stirring constantly and add back the sausage cook it til done ✅

    The secret to amazing gravy, is a bit of real creme and a premium sausage. And by premium, I don't mean expensive name brand shit, I mean some local butcher shop, high fat, well seasoned, breakfast sausage. No amount of salt and pepper is going to save a low quality sausage.

    125 is too long. That final cook is past medium. Shoot for 118 to 120 at the most before searing. And sear the fat strip on the side. Preferably first. At least put it up against the side of the pan so it renders and browns.

      My dad was in the Air Force and he made the same shit for me and my brothers. Growing up. I didn’t know what sausage and gravy was until I was in my twenties. I’m like “this is shit on a shingle…” and my friends would give me funny looks. And we ate it on toast as well. The only part is that I was doubly wrong. Yes, they call it shit on a shingle but the original shit on a shingle was made using chipped beef. I thought maybe I was just taught wrong growing up until I read this comment. You ate it the exact way I did and called it SOS too.

    You actually want to try to avoid coarse cracked black pepper on a steak. When searing, the coarse pepper doesn’t allow full contact with the pan, which can compromise the sear. And the music needs to go.
