Perfect Special Jain Rajma Recipe | स्वादिष्ट राजमा रेसिपी | without onion and garlic
INGREDIENTS
• 125- 150gm kidney beans (rajma)
• 7- 8 Medium Sized tomatoes
• 6-7 green chilies
• 1 large piece of ginger
• A little bit of fresh coriander leaves
• some curry leaves
( sweet neem )
• 7-8 cashew & 2tbsp Grated coconut
• 3 tbsp of ghee
• 1 tbsp cumin seeds
(jeera)
• 1 and 1/2 tbsp of asafoetida (hing)
•1/2 tbsp turmeric powder
• 1 tbsp Red Chili Powder
• 2 tbsp coriander powder
• 1 & 1/2 tbsp of table salt
• 1 glass of warm water
• some coriander leaves for garnishing
PROCEDURE
• Take 125-150 grams of kidney beans ( Rajma)
• Soak the kidney beans overnight, wash them
thoroughly, and then boil them in a pressure
cooker, taking 7-8 whistles
•. Now take
◦7-8 medium-sized
tomatoes
◦6-7 green chilies
◦1 large piece of ginger
◦A little bit of fresh
coriander leaves
◦ Some curry leaves
(sweet neem)
◦7-8 cashews
◦2 tbsp grated coconut
• We'll put all the ingredients in a mixer grinder and blend them well to make a smooth paste or gravy
• Now we will take 3 tbsp of ghee in a Pan
• After the ghee gets hot, we will add 1
tablespoon of cumin
seeds to it.
• We will add 1/2 tablespoon of
asafoetida
• Add 1/2 tablespoon of turmeric, 1tablespoon of red chili powder, and 2 tablespoons of coriander powder
• We will let the gravy cook on low flame for
4-5 minutes
• After 5 minutes, when the gravy releases the
ghee, we will add 2 tablespoons of table
salt to it
•We will let the gravy cook for 2 more minutes
•We will add the boiled kidney beans and mix
them well with the gravy
•Now, we will add 1 glass of hot water to it
• After that, cover it and cook for another 2-3
minutes
• We will add finely chopped fresh coriander leaves to it
• We will cover it and let it cook on medium
flame for a while
• after a while turn off the flame Your Special Jain Shahi Rajma is Ready to eat

PROCEDURE • you need to take 20-25 grams of pistachios • put the pistachios in boiling water & let them boil for 5 minutes. After that, remove their outer skin. • Take 1 bowl of vermicelli and crush it into smaller pieces • Take a pan , add butter , roast the vermicelli until it turns golden brown. • Take 125gm of white chocolate, melts it in the microwave for 30 seconds, check it and then melt for another 30 seconds if needed. • Add 2 drops of red & yellow food coloring to small quantities of melted white chocolate. • Make a colorful design for Modak molds with white chocolate, and then put it in the freezer for 10 minutes. • Take 125g of dark chocolate compound, melt it, and pour it into the Modak mold. Then remove the excess chocolate from the mold. • Then place the molds back in the freezer for 10 minutes. •Now, in a mixer grinder, add the boiled pistachios, roasted vermicelli, 2 tbsp of sugar, 2 tbsp of butter, melted white chocolate, and around 2 tbsp of vanilla essence. Grind everything well to make a slightly coarse paste. • Now, fill this coarse paste into the Modak mold properly and place it back in the freezer for 10 minutes. • After 10 minutes, cover the open side of the Modak mold with melted chocolate and place it back in the freezer for another 10 minutes. • After 10-15 minutes, unmold the Modaks, garnish them with a little desiccated coconut, and enjoy.

Ingredients 3 Raw Mangoes (keri) Some Fresh Mint leaves 1 tbsp Roasted Cumin powder 1 tsp Black pepper 1 tsp Hing 1 tbsp Red Chilli Powder 1 Bowl Sugar (or as per your taste) 3 tbsp Black Salt ( kala namak) Procedure: Take 3 raw mangoes, put them in a cooker, and add the required amount of water. Allow it to whistle 5-6 times. After cooling, remove the mangoes from the cooker, discard the water, and add fresh water. Once cooled, follow the procedure mentioned above: put the mangoes into a mixer grinder, add the specified spices, grind well, and transfer to a bowl. Aam panna is now ready.

You can use any mixer grinder. Here, I am using the Sunmeet mixer grinder, which I purchased from Flipkart.
