Flaky Crust Mushroom Bites
Flaky Crust Mushroom Bites
Total Time: 30 minutes
Makes: 3 servings, 4 cups each
1 yellow; 1/2 blue; 1 green; 1 tsp
Ingredients:
12 frozen phyllo cups
(for the mushrooms)
3 cups mushrooms, ½” chunks
2 cloves minced garlic
4 tsp ghee
½ tsp dried thyme
¼ tsp sea salt
¼ tsp black pepper
(for the whipped goat cheese)
½ cup goat cheese, room temp.
¼ cup 2% Greek yogurt
1 T cold water
2 T minced chives
2 T minced shallots
1/8 tsp sea salt
¼ tsp black pepper
(for the balsamic reduction)
½ cup balsamic vinegar
Preparation:
1) Preheat oven to 350 deg. F.
2) Add the balsamic vinegar to a small saucepan, bring to a boil, reduce to a simmer and cook, 7-9 minutes, until syrupy and reduced to about 3 T.
3) While balsamic is reducing, heat the ghee in a large skillet over high heat until very hot. Add mushrooms immediately and cook without stirring to let them brown on the bottom. After 3 minutes, stir then cook another 2 minutes without stirring. Reduce heat to medium, add the garlic, salt, pepper and thyme and cook another 1 minute. Set aside.
4) Add the goat cheese, water and yogurt to a food processor and process, about 1 minute, until whipped. Stir in shallots, chives, salt and pepper. Set aside.
5) Arrange phyllo cups on a baking sheet. Fill each cup about ¾ of the way full with cheese mixture, about 1 ½ tsp per cup. Top with an equal amount of mushroom mixture, about 1½ T per cup. Add a light drizzle of balsamic reduction, then finish with a final layer of cheese mixture, about 1 ½ tsp per cup. Bake, 5 minutes.
6) Remove from oven and sprinkle with a little bit of minced chives as garnish. Serve warm, or at room temperature.
Notes:
- You won’t use all the balsamic reduction, but it’s hard to reduce a smaller amount without it burning, so save the rest in the refrigerator. It’s a free food that’s great on everything from fruit to chicken breast!

When I have butternut squash on hand all I can think to do with it is roast it. I saw this recipe and it looks amazing so I thought I’d try it. This recipe is so incredibly easy and it is SO GOOD! We topped ours with some pepitas and extra butternut squash I had roasted separately. My husband and I love this recipe!

I have never bought anything outside the Cremini's simply because I didn't know anything about the others or how to prepare ones like the oyster ones. Now I can't wait to try those instead. Instead of starch you could have put some flour into the vegetables while they were cooking befor adding broth,,,also I would have added 1 package of gravy instead of the flour or starch..

Please Please Please par boil the potatoes when you make this recipe. I had it in the oven for over an hour and everything smelled great, but the potatoes were underdone. Otherwise this is a great recipe.
If you mandolin your potatoes to 1/8” thick, they don’t need to be parboiled, but a thicker cut could give you that problem. I’m glad you otherwise enjoyed the recipe 😊
Bobby curiosity..is there a reason to use wood spoons and such for cooking?
Wooden spoons are great when you need something sturdy to break up ground meat while sautéing or to scrape the brown bits off the bottom of a pan while making a sauce, but for general stirring you will usually see me with a silicone spatula

would this freeze well and if so how would you freeze and then thaw/cook when ready to use
I would freeze it in an oven-safe pan covered in plastic wrap, then unwrap and place in a 325 deg. F oven until it is hot in the center
