Very interesting. I believe more emphasis should be placed on the nutrient content/density of food. If the nutrients are low then the mitochondria would have a difficult time converting glucose into energy and would build up in the cell creating a concentration gradient within the cell that would make it difficult for insulin to “force “ glucose into the cell. Same should apply to fatty acids (lack of nutrients to convert into energy). That would lead into current farming practices, what’s done to the soil, etc.. , which would be controversial in a farming community that uses, mostly, conventional farming (pesticides, artificial fertilizers,etc..) that in my opinion weakens the soil and therefore the nutrient quality of crops grown in that soil.
