Gheymeh is a traditional Persian stew made with tender meat, yellow split peas, and tangy dried
limes, topped with crispy golden fries or eggplant. Like all Persian stews, it’s served with fluffy saffron rice, making it a hearty and flavorful meal🍚. One of the best side dishes to complement this dish is Mast-o-Khiar, a refreshing cucumber yogurt dip🌱. I also served a traditional Persian syrup alongside this dish 🥃.

Yellow split peas: 1 cup (washed and pre-soaked)
Tomato paste: 2 tablespoons
Dried limes (Limoo Amani): 3 (or more to taste)
Potatoes: 2 large (for crispy fries)
Cinnamon sticks: 2
Cardamom pods: 2
Rosewater: 1 tablespoon
Turmeric, salt, and black pepper: To taste
Cooking oil: As needed
Brewed saffron: 2 tablespoons
