Why do we need low heat?
They should never feel rough to the touch or hard, also they shouldn't look yellowish in colour because they don't seem to be healthy and look ugly . When that happens i just consume them or throw them away, keeping just the fresh gummy white ones.

She said 60 - 70 degrees at low temp at 1:10 mark. I’m not sure if she’s right about that. What is the heat limit that raw foodists use? I believe it’s below 120 degrees.
At 4:55, judging by the steam coming off that Kefir (omg - steam coming off Kefir? Seriously?), every bacteria, friendly or otherwise in that bowl is almost certainly already dead or dying. It may make cheese but it will be devoid of any good for you probiotics or good for you anything. In which case what is the point? Please anyone trying this. Just let the Kefir Curds Whey et all take it's time and separate naturally, without the bacteria killer called heat, then you'd get a cheese rich in probiotics, not just a lump of useless, if not tasty goo!

The "yellow water" is source of protein. All companies making protein powder use this. They just get rid of water and woala, protein powder exists! Everything is drinkaable!
