Sensei I made two briskets I let them rest for a couple hours before I put them on. I forgot what temperature it was when I put it on I didn’t take no pictures cause I was cooking other stuff. It came out good. I’m trying to find a better brand of briskets in the Pennsylvania area.

Im using a prime brisket from Sam’s club they are a hit and miss to me. I’m in Easton pa. Haven’t got to a butcher shop yet I’m go try this week and it’s a restaurant depo .1 questions do you pull your out early and do hot hold I never did and I was thinking about doing it
@ I pull early to wrap and finish, but we finish at 195-197 avg middle internal and rest down to 145

I’ll be at this Thanksgiving got three briskets to put in the smoker. Hopefully it jiggled like that.

It’s a prime brisket from Sam’s Club. Maybe I need to takeoff more of that fat cat to make it air dynamic better.
@@KillyroyAR15 at which temperature do put it in? In my experience, not just the temperature of your smoker matters, but the temperature of the meat itself, too.
I appreciate the knowledge I was putting the briskets on around the same time. I get it out the refrigerator maybe an hour to trim and then right on .
@@KillyroyAR15 I trim it right away after pulling it out of tge fridge. Usually I let it sit wrapped afterwards until core temperature reaches 64.4°F or 18°C.
