Hey I’m James, a professional Food Blogger, author and fully qualified Health Coach from Bournemouth U.K. I create easy, delicious gluten, dairy and egg free recipes most of which are plant-based. But I do my best to open my recipes up for everyone to enjoy no matter your food allergies or choices.
My aim is to inspire you to cook easy and delicious home cooked food. 11 years ago I fell seriously ill out of the blue which left me bed bound for 2 years and house bound for the next 4 years. Food was one of my key ways of recovery so I decided to open my blog in 2016 to share my journey and passion for food with the world.

Banging Bhaji Burgers (gluten free & vegan)
Today I am showing you how to make Bhaji Burgers 🍔 These are fun to make in roughly 15 minutes and something a little different to try! They're messy to eat and totally delicious.
Serves 4 bhajis
Bhajis:
▪️500ml cooking oil (I use vegetable oil)
▪️1 red onion
▪️1 courgette
▪️2 tsp ground coriander
▪️2 tsp paprika
▪️1 tsp cumin
▪️pinch chilli flakes
▪️salt & pepper
▪️Juice lime
▪️75g besan flour (aka gram or chickpea flour)
▪️2 tbsp water
▪️Burger buns to serve
▪️lettuce to serve
Vegan Tzatziki:
▪️4 heaped tbsp coconut yoghurt
▪️2 inch piece of cucumber
▪️small handful fresh mint
▪️squeeze lime juice
▪️salt & pepper
1️⃣ Firstly, heat the cooking oil in a small but deep pot (aim for 3 inches deep of oil)
2️⃣ Now in a large mixing bowl add sliced onion + grated courgette + spices + salt & pepper + lime juice of lime + besan flour + water and mix
3️⃣ Shape the mix into burgers
4️⃣ Carefully fry one bhaji at a time in the oil for around 2 minutes until golden and crispy. Remove and place onto kitchen roll and dab off any excess oil
5️⃣Meanwhile, prepare your tzatziki by adding the coconut yoghurt + grated cucumber + chopped mint + lime juice + salt & pepper into a mixing bowl and stir to combine
6️⃣Place your bhajis into the burger bun and serve with lettuce and a dollop of tzatziki
FAQ's
➡️Can I air-fry these? I haven't personally tried that yet but I think they would work but unsure on time or settings so have a play about
➡️Can I cook them in less oil? Yes, you could shallow fry in a pan but they won't come out as crispy
