What if you don't have tapioca starch?
Can you freeze this to save later?
Is it really necessary to add tapioca flour? What can I substitute it with? I don't have any, I moved to Spain and a lot of items are really hard to find, tapioca flour might be one of them.
Yes, you must add tapioca starch/flour.
What kind of gluten free bread did you use?
I'm interested in making this recipe with your Nicole's Best flour blend. I came across a chart that says I have to add Xantham Gum to your flour blend but that isn't listed here in this recipe. Can you let me know how I need to adjust this recipe to get it to work?
For every cup of gluten free flour blend, to make yeast bread please add 1 teaspoon per cup of flour, according to the Nicole's Best User's Guide. How long do you cook the Raw Dough for?
UPDATE: I have put 8 cookies in the oven. After 10 m they did not spread. So the tip here is to let them in the baking tray in the exact shape you desire. I'm convinced it is the xantham gum. I bought mine in Brazil, it lasts ages in the fridge and it is very powerful!
Can I millet flour as my GF flour , and will it come out well?
No, you cannot use millet flour alone as an all purpose gluten free flour.
I love that you have your GF recipes with videos, makes it easier for us beginner bakes to see what consistency the dough should come out as.

I made this without the meat stuffing. The buns actually turned out nice and soft inside, but I did replace two thirds of the white rice flour with almond flour. This is my first time using pectin in a flour mix and it seems to help. I didn't have modified tapioca so I just increased the xanthan gum. Also it was too sweet for me, so next I would omit the sugar.
What temp for the crust?

Saw this video and the kids (3 + 5 yo ceoliacs) and I made it right away. They didn't get the air bubble in the middle but we just cut them to make a pocket. They were SO DELICIOUS. Major win in our ceoliac home. Thank you!
Hello Nicole, How would you advise baking this pie crust until done for no-bake fillings? Thank you for this recipe--it is a keeper!
Please see the instructions in the recipe for how to parbake the crust, and just continue baking the crust until it's fully baked, about another 8 to 10 minutes.

Nicole, I used this cake to make some Lamingtons for my husband. I baked it in a 9x13 pan and increased the baking time a bit. Once it was cooled, I trimmed off the edges and cut it into 16 rectangles which works for his lunch. I prepared some Strawberry Jello (Sm box) according to package, let it cool then painted the rectangles on all sides with the Jello. Rolled them in some desiccated coconut and let set in the fridge. So moist and delicious! This was the perfect recipe for this!! Thank you!

Hi Nicole! Any advice on lightening the cake up a bit? First of all, I think you’re a genius. I love your recipes BUT I’m struggling with the density of the vanilla cake. I wouldn’t mention this typically, but I am a professional baker so I’m confident that I am following your instruction to the T. I’m using all quality ingredients at the right temperature and I’m weighing everything. I’m using Cup4Cup. My last ditch effort is that I’ve just sent my husband out for brand new soda and powder. I’m on my 5th test with your recipe. Soon I’ll have to check myself in for sugar overload lol but I’m determined to get this right. I’m bummed that I can’t figure it out on my own. My husband is a trained chef so I’ve asked him to give it a whirl since he seems to find all of my imperfections. We own a large bakery where we do everything from scratch in astronomical volume. I wanted to use your vanilla cake recipe because it is so delicious but I fear if I can’t get it right at home, our bakers may not be able to give it the attention to detail that it requires. Any advice is appreciated and thanks for all your hard work on the GF highway. After 10 years of owning a bakery and some health problems, I found out that I’m highly allergic to gluten. I’ve been 100% gluten free for over 2 years now. Discovering your blog was such a gift and a wealth of information! And PS, we think my bad versions of your cake are even yummy! Can’t imagine the light and fluffy version.
This cake is not dense at all, Nicole. I'm afraid I can't really provide any more advice than the recipe post itself, including sifting ingredients, creaming the butter, etc. You've explained repeatedly that you're both trained chefs, and insisted that you followed the recipe "to a T," but if you've ever developed recipes and shared them with others, you probably know that that is rarely the case. People almost always have habits in the kitchen that they're unaware of, and they can greatly affect the outcome.
I made these for the second time today and they are just amazing. The first time I used King Arthur AP GF flour and they were good but definitely had a bit of a grainy texture. Today, I made them with your mock better batter GF flour and subbed a couple tablespoons of the butter for cream cheese. You can't even tell they're gf! They rolled out so nice (I use tapioca flour for rolling out dough) and baked up perfectly in 6 minutes.
I'm so glad you made the switch to the better gluten free flour blend, Cydney! King Arthur's gluten free flour blend is pretty starchy, but its bigger problem is that it has a gritty rice flour. You really can't do anything to correct for that.
NIcole, this is exactly what I needed for a dish I want to make. I can make almost any condensed soup substitute GF but I can't find a recipe for a condensed cheese soup. This will work nicely! Thank you!

Top Notch! I love a good almond flour cookie - used my star cookie cutter, sprinkled some cinnamon sugar then added an almond on top of the cookie after baking. Delicious!! Next time I will try the chocolate on top, gotta do a grocery run to get all the ingredients. 🍫
