Prep Once, Enjoy All Week: Japanese Veggie Side Dishes
I am sharing how I prep my vegetable side dishes.
I eat a little of them with each meal, which helps my family eat more vegetables throughout the week.
In Japan, we have the term 'Ichiju-Sansai,' which refers to a traditional meal structure translating to 'one soup, three dishes.' This concept emphasizes balance and nutritional variety in a meal.I know that eating a variety of foods is healthy, but as a busy mom like many of you, I can’t prepare so many dishes every time. However, if I prep them all at once, it’s much easier than cooking side dishes for each meal.

1/4 of Cabbage
1/2 of Carrot
1 Cucumber
1 tbsp of Sugar
2 tsp of Salt
1 tbsp of Vinegar
1 tbsp of Dried salted Kelp (Optional)
*** Spinach Ohitashi ***
130g of Spinach
1 tbsp of Mentsuyu
Dried Bonito flake as much as you like
*** Spinach Namul ***
130g of Spinach
1/2 carrot
1 tbsp of Sesame Seeds
1/2 tbsp of Soy Sauce
1 and half tbsp of Sesame oil
1/4 tsp of Salt
*** Lotus Root and Carrot Kimpira ***
200g of Sliced Lotus roots
1 carrot
1 tbsp of Oil for cooking
1/2 tbsp of Sugar
2 tbsp of Soy Sauce
2 tbsp of Mirin
1 Red Chili Pepper (Optional)
1 tbsp of Sesame Seeds

Benefit of Kelp (Kombu)
1. Rich Source of Iodine
Uniqueness: Kelp is one of the richest natural sources of iodine, essential for thyroid health. Most terrestrial foods lack sufficient iodine unless fortified, giving kelp a distinct advantage in supporting metabolism and hormonal balance.
2. Natural Umami Flavor
Uniqueness: Kelp contains high levels of glutamic acid, contributing to its savory umami taste. While some foods like mushrooms or soy sauce also have umami, kelp delivers it naturally with minimal calories and no added sodium.

Comparison: Unlike many land-based vegetables, kelp absorbs minerals from seawater, resulting in a high concentration of calcium, magnesium, potassium, and iron. For example:
Kelp contains more calcium per gram than milk.
Its iron content rivals that of spinach.

    At first I wasn’t sure about Anko but after living in Japan for a while I really came to enjoy the sweet earthy taste in all sorts of Japanese sweets. I think I like Koshi-An most!

      You can substitute strawberries with grapes, mandarins, Kiwi fruit or even cream cheese is good much with Anko paste! I hope you can find your favorite Daifuku. I didn't mention it in the video, but Anko and Whip cream is also nice. Thank you for your comment as usual!

      Do you like eating cookie dough before baking? I won't recommend taste the Dango dough as it won't be tasty, I believe. It's uncooked rice powder. I might be wrong. I never tried!

      @@JapaneseCooking123 I don't really have any recipes in mind. But I have some ramen pack at home so you could do one of ramen! or any other Japanese dessert. ( I will be waiting for the brownie I have never seen one from tofu actually) thank you!!!
