I want to eat my screen
I can't ever knead the dough without it sticking to my hands. I dust my hands with flour i try adding flour to the dough but it seems to be way too much flour for the recipe and the dough still sticks! Any advice? Besides getting a kneading hook, I want to do it old school.

Flakey dough you have to fold in the butter with the crust like you would with a croissants dough. Or biscuits. Like you have the dough already prepared and then you roll it out and fold it around a few times with butter in the middle until it's turned a few times. I don't know the Chef terminology but I just know from cooking baking
@@rinanimo right, I think it’s called laminating! you don’t reallyyy have to laminate pie crust because there are already chunks of cold butter that will leave flakes when the moisture evaporates, but it helps if you do a quick faux lamination by layering the dough on itself like I’m doing in the bowl at the end.

it’s around six months of classes in the kitchen, then a 2-3 month externship at a restaurant or other food related job

Looks really good. Going to make this tonight as meal prep. Edit: delicious! I added potatoes instead of orzo and substituted half & half for the heavy cream. Really good. Hopefully you keep the recipe on you website up.

yes! we have a kitchen full of different specialty ovens and tools
god i really want to go to a culinary school but i just know the very very basics of cooking 😭 should i still give it a try? i feel like most people that go already have a little experience

I actually thought you had to make crepes on a crepe pan! we probably do have them, but our chef said it was better for us to learn on these because not every kitchen will have crepe pans.

you're going to culinary school for 108 days when your previous generation went for 2-4 years, took math classes, business classes and actually know how to cost a menu and THEN spent 10 + years in restaurants before they were able to be called chef. don't waste your money, you are in NYC get a job and learn on the job and make money while you learn rather than paying money to learn. DUH.

You can eat anything with some creativity
Most animals can be eaten.. Even bear, reindeer, moose, rat, squirrel, skunk, raccoons..We just don't do so because some of them taste bad, has chewy texture or isn't just socially that acceptable.. And if you go to Peru, they eat guinea pigs there.
