Personally, I like my sound sources as analog as possible, so when I'm in the box I'm often looking for VSTs that emulate real gear well. Arturia stuff tends to be awesome in general, they do a lot of cool emulations of real vintage gear. Also I love AAS Lounge Lizard EP-4, it's my go-to for a super solid Rhodes / Wurli emulation. I'm also fond of making a pad from analog sources (flutes, guitars, field recordings, you name it) and then dropping them into a sampler in loop mode so you can play these custom textures as you like. Check out the pad in Ne(s)t, the first track as an example. For a traditional trip-hop sound, the more you play with manipulating audio and degrading it with software or analog means the better as a big part of the original trip-hop sound came largely from the hardware limitations of the time (sampler bit rate limitations, tape funkiness, analog noise etc). Cheap version of that stuff is find old cassettes or similar fun semi abandoned gear around to run your sounds through to give them life and character, or just opt for one of the many plugins that emulate tape machines, record players, and the degradation of old samplers. (Vinyl, RC-20, any tape or cassette emulation) Hope this helps :) have fun!
