You should get Gold medal for an most rubbish, low quality 10 y/o product advertisement, you can sharpen your knives with everything, rock, sanding paper, any single digit priced sharpener etc. If you buying cheap labour chinese products like theese, stick to an delivery food...
I've recently started using an Easton 2x42 it was only 250. I like the 2 inch wide for that added surface. I've done full knife thinning on it.

I just want to say, I've been a freelance web designer for the last 15 years and glued to a screen for a lot longer than that. Turning 50 this month, I knew I needed a change in my life but I wasn't sure what. I'm an active person but sitting in front of a computer was starting to kill me. I've been my own boss for a long time so no problem with starting a new business but I was struggling to come up with something. One night the UA-cam algorithm throws up one of your videos and I swear I was hooked immediately. This was about nine months ago. Long story short, I'm attending a sharpening course here in the UK next month and I'm making a huge change in my life for the better. I genuinely don't think that would have happened if I hadn't seen that video, so thank you! I hope you keep uploading, you are literally a catalyst for me trying to make a better working life for myself. Again, thanks.

I use a professional machine that comes from a meat processing plant its capable of sharpening hundreds of knives a day with no issue and gets a razor sharp edges that last in about 30-50 seconds if the knife already has that angle or about 2-3 minutes if not. It has a 3 step process where there are 5 wheels on the machine, The first 2 grind each side, the second two hone each side which cleans up the grind, then final one polishes the blade to a mirror shine and removes the root of the burrs and thats it the knife is now razor shaving sharp. Of course for I can also finish off the knife with my Kangaroo Tail strop to get it scary sharp.

How do you power your machines at a βjobsiteβ? Generator or battery or extension cords?
Harbor freight 4 sided diamond sharpener is great for tools and taking off major material and itβs only around $10. Spyderco sharpmaker is also great for beginners. Curious as to the motor specs and belt grinding rig you use? My 2x72s are too overkill for me to get good final edges on personally.

Can you sharpen high carbon, thin geometry, japanese knives with these belt sanders? Or is some steel too brittle and chip-prone for them? I bet for most knives it works fine, but, just wondering about those high Rockwell steels.
The problem with belt sanders is the high temperature that the friction creates, and in most cases, it will damage the steel permanently.
Yeah I've been sharpening my high end Japanese knives with these machines for years. It definitely requires a light touch and more experience
With a regular high speed belt driven belt sander and standard belts for wood.... definately not unless you are really good and know how to not heat up the steel (or cool it down a bunch). With belt sanders for sharpening with lower rpm and belts that dont generate as much heat..... absolutely. Good belts, a knowledge of pressure required and lower speed. In general 1500-2200 rpm, anything faster and you need to watch out! so standard belt grinders are out. Adjustable units are the best of both worlds but usually are more expensive. Knife makers use 2 x 72 adjustable speed units or water cooled faster speed units for this reason. You can also buy diamond belts for the crazy hard crucible stuff .... I've never bought any of those. With all this in mind a expert or knifemaker could prob use any setup and do a good job getting it sharp.... experience and good knowledge base.

I have very little need to sharpen knives other than the couple I have in my kitchen, but I think you have huge potential to gain a large audience with some tutorials on how to use more consumer-grade products just like you mentioned at the beginning. shun knives are slicing knives. not chopping knives. use it right and it will treat you right. The only knives I ever had that didn't chip were Miracle Blades... and we all know how great those are....

I got some cheap Chinese made knives that were made in the style of Japanese knives as a gift recently. Wonder if it would be worth getting them sharpened.

@ kind of figured that would be the case. I just figure they look pretty thin and probably made of some soft metal so maybe not worth sharpening when they are likely to get dull quick
I think those customers doesn't know when their knife is actually dull. It isn't lasting as long as they say if they remotely use it everyday. I have some random decent knives (made in Japan, dexter, Russell) and I can tell the difference after honing edge on ruby stone VS after edge is used to dice up few chicken breast and thur silvers of fats and tendon which is very telling for state of edge. Most kitchen knife steel is in my opinion trash if they done specify exact steel of d2 or equivalent and above and hardness over 58 hrc. Kitchen knife are made for frankly idiots. Compared to nice pocket knife steel for kitchen knife what average chef say are decent are actually absolutely trash. also belt sharpening is fine for plebs but it ruin heat treatment at microscope edge due to speed of belt heating up edge even w light pressure and fast pass. Edge is softer after using belt opposited to wet belt or wet hand sharpened.
