Gluten free pizza in camp oven over fire
We cook gluten free pizza in a camp oven/ dutch oven over a fire and show you our van.

Pizza base recipe:
Ingredients
7g sachet dry yeast
1/2 teaspoon salt
1/2 teaspoon sugar
2 1/2 cup plain flour (310g) or if using gluten free flour 2 cups and maybe a little more if needed.
2 tbspn olive oil
2 tbspn semolina or polenta
Method
Combine the yeast, salt, sugar and 1 cup of warm water in a small bowl and leave covered for 10 minutes in a warm place until it becomes foamy.
Measure the flour into a large bowl, make a well in the middle and add the foamy mixture of yeast and mix well until it comes together as a ball. At this point if you are using gluten free flour assess the dough if it seems too dry add more water if it seems too wet you could add more flour. You want it to come together and be pliable.
If you are using gluten free flour you are ready to roll it out onto your tray, after oiling it and adding polenta if desired. (I didn’t,do that this time but sometimes do, if I have polenta available, if not leave it off.
If using normal flour you will need to knead the dough for around 5 minutes on a lightly floured surface until smooth and elastic.
Roll dough out to thickness and size desired. Divide the dough into 2 if you want thin crust and a 35cm pizza base tray, or use a cookie sheet for a large thin crust. If you want thick crust use as is on a 35cm round pizza tray.
Spread with pizza sauce and your choice of toppings.
Bake for around 30 minutes in a 210 deg oven.

Alroy Station visit

Gayndah Historical Society is also the information centre in Gayndah. It has a large collection of historical buildings, vehicles and household items. Well worth a visit if you are passing through Gayndah or if you live in the district. The society also do regular steam up days which are well worth the visit.
