Its funny how in America its a no no, but then sells you ultra processed food thats litteraly killing you in long run.

Funny how none of the videos I've seen on mite and maggot colonized cheeses such as Mimolet and Casu Marzu never seem to show active colonies of mites or Cheese Skipper larvae in close up footage. These cheeses originated when stored food was regularly "infested" with mites and insects such as weevils and fly larvae. Weevils attacked grain, peanuts, beans, nuts, and peas. Cheese Skipper larvae (Piophila casei) fed on cured and dried meats, and cheeses, and were named for their ability to jump. They are deliverately introduced into Casu Marzu cheese to colonize and produce the finished cheese. Mimolet, Milbenkase, and Cantal cheeses have mites introduced into their rind for the same purpose. People with Dust Mite allergies are also sensitized to mite colonized cheeses. Livestock fed feeds infested by fliur and cheese mites show varying levels of illness symptoms and reduced growth and production. Cheese and flour mites also trigger "grocer's itch" in sensitized people, and can overrun cultures of Mealworms and Flour Beetles raised as feeder insects or for research. Mites are present in small numbers in many, probably most, modern and hygienic cheese and flour production and storage facilities, and are easily overlooked because of their tiny size. Their total eradication would require miticide application on a scake that could be more harmful than small numbers of mites. Cheeses that are not deliberately inoculated with mites often become colonized by these if they are aged long enough.

there is a mistake in the audio because to obtain the cheese, the DOP method is rennet curdling of the raw goat milk, during 18h to 36 hours (and they add ferments as well). Additionally If you buy from the farm, the milk shall not dwell in excess of 18h before rennet addition. Thanks anyway for your passion of this excellent cheese !

Its funny how regular cheese (not even luxury cheese) is far more expensive than chicken meat now...when in the past it used to be the other way round...cheese was used as a cheap substitute for meat at the time (see : britain's ploughman's lunch).

@@CheeseHeavenTV Its not just inflation, cheese in some countries is now considered a luxury product, especially real, non-processed cheese. Real cheese in Singapore starts at about $40/kg, for reference, boneless chicken is $10/kg or less. Sliced, processed cheese is usually $20/kg.

I'd recommend a medium-bodied white wine like a Swiss Chasselas or a French Chardonnay. If you prefer red wine, a lighter red like Pinot Noir can also pair wonderfully.
