If you just accidentally delete something just undo that. Check trash. If you "permanently" deleted (you probably shouldn't do that), try using testdisk. It's an open source program to recover deleted files. When you delete a file, you actually only delete it's entry in the file system's table. How exactly file systems handle this depends on the file system itself. Sometimes the filename might be gone. Other times the data may need to be analyzed to find where it starts and ends. This is easier if you know the file format. Many files have so called magic headers, that indicate what kind of file it is, a file header may contain how much data the file contains, and many file types, like pdf, jpg, or zip, have specific end markers. In any case, the data is still on disk, it has just been marked as free for reuse. That is why it's important to reduce write operations and restore the file as quickly as possible. If it is important you shut down the system and boot into a live media, and mount the drive read only and restore from there. If it's critical, you make a disk image byte for byte, copy the disk image and use that as your working image to restore data from. If you accidentally delete something it's usually recoverable if you are quick about it.

You missed a somewhat important cutscene by not interacting with the door before you rang both bells. Also the garden knight is the boss to teach you stamina management. Attacking and healing doesn't use stamina, but it stops recovery. Shielding slows recovery. If you don't take a break and hold back a little you will run out and get smashed into the ground.
