You seem to be firing the missiles sometimes by holding the button, and then releasing before the yellow bar fills back up. Like 4:45:09 for example. If the bar isn’t filled the tracking won’t really work. Either just tap if you want to send a volley towards a single enemy, or if you want to divide the missiles between enemies, hold the button and wait for the bar to fill up again.
