Learn how to make the delicious authentic chicken curry. I have showed all tricks and techniques to cook the best chicken curry which will make everyone to fall in love.

This dish is very popular in Tamileelam and Tamil Nadu. This tamil dish has become well known since the British colonized Tamileelam and India. But there are different regions uses different recipes, what I am cooking today is an Eelam cuisine delight. This is usually cooked in mud(clay) pot on the wood fire and served with Rice or Puddu.
Ingredients
1 whole chicken (ca 1.250 kg)
1 Onion
3 Green chillies
1 Tomato
6 Cloves garlic
20g Ginger
1 bay leaf
Curry leaves
Pandan leaf
Spices
1 Cardamom
2 Cloves
15g Cinnamon
1 tsp black mustard seeds
1 tsp fennel seeds
1 tsp cumin
1 tbsp tumeric powder
2 tbsp Jaffna curry powder

⚠️ℹ️ If you don't like spicy please use one chilli or avoid chillies and use 2 tsp of Jaffna curry powder instead 2 tbsp.
Tips
• Don't add too much water, just add water to the level of the meat on the pot.
• Don't cook the curry on high flame, curry needs to cook on low flame so it can absorb all the spices and give the harmonic balance to the dish.
• Don't wash the chicken, it's a myth that you should wash it.
• There are tons of Curry powders available on the market but for this you'll need "Jaffna curry powder" which is available on all Tamil shops.
The speciality of this curry powder is that this is made of 30 + roasted and grounded spices. A perfect blend. If you couldn't find this use Curry madras as alternative.
• Serve with Basmati rice and you can make lentils curry, carrot sambal or fresh cucumber.
• If it's hot serve Yogurt on side which will balance the spicy.

1 மேசைக்கரண்டி மஞ்சள் தூள்
2 மேசைக்கரண்டி யாழ்ப்பாண கறித் தூள்
100 மில்லி லீட்டர் தேங்காய் பால்
1/2 தேசிக்காய் சாறு
