Both of my Grandpas were dead by the time I was born, so I never had these experiences with them. I can tell that you cherish him and the experiences, as you should, and the old guy really knows his way around a kitchen. I had a great (as in terrific) uncle that helped me experience the outdoors and I feel for him the same way. I did know my Grandmas and I learned to cook from 'em, so I know a real cook when I see one and he's a keeper.

everyone always forgets the head, the jaw muscles are just like lobster
I used to chop off their head with an axe when they tried to roll over. Now I just step on their tail, grap the snout with a pair of pliers and cut the head off with a knife. It is much cleaner and neater. Now grab the feet with pliers and chop off the feet, that way you don't have fight with the claws while cleaning. Love that turtle meat!

You know of course I'm not subscribed to you and I hope you read this since it was a year ago and I certainly hope that Grandpa is still there. I wish that my grandpa was still here I'm a grandpa of my own self and teaching my grandkids I know is as just enjoyable to him as it is to me but I do have to say one thing enjoy him enjoy him as much as you possibly can because one day he won't be there and I hope he's still there now.

I'm 65 now, me my dad and papa used to catch turtles and make turtle stew and the smaller ones were skinned and fried they were delicious
Ole one eye took one for the team.
Ole One Eye was also my grandfather's giant catfish that got away and he got to finally catch it again late in life. He was so very proud and we ate it for a year! It was almost as tall as me, and I am (was...I'm old and shorter now), 4'10 1/2" tall! How exciting for your Grandpa! I never ate turtle, and don't think I would go through that much trouble. It's creepy how it keeps moving as you clean it after it is dead. After watching you prepare the soup, and how well you cleaned the meat it sounds really good! You are so blessed to still have your parents and esp. grandparents. They are precious so treasure every moment!
The bellies on those two older gents look like they've put away a LOT of beer over the years! For those watching who may be upset seeing the turtle's legs and tail moving, that's just nerve action in the muscles, once the head of the turtle is decapitated, the turtle is dead, but the muscles can still react for quite a while after the animal is dead, especially in reptiles. That's why you may have heard of a snake's head still biting even though it is apart from the body. "Muscle memory" may stay for quite a while, that's why you still see movement after the turtle is dead.
I wish it was later on in the year so I could pick the vegetables out of my garden to follow your recipe I came across this video while looking for a recipe to follow so I could cook my own turtle that I just caught out of my buddies Lake

Hay nice catch but next time try cleaning it out in fresh water in a 55 gallon barrel for 3 or 4 weeks it will clean out all the mud taste and try putting a garden hose down it neck and wrapping a wire around the hose and neck and flip on shell and turn on water slow when the water shoots out its ass he is done lt pulls the meat away from the skin and open fire it makes it taste better as well i do it all the time
